A brand new wine to our Black range - Prosecco - perfect for celebrations or casual enjoyment with friends!

 

Our Italian-made, organic Prosecco is a light, refreshing sparkling wine known for its crisp flavours of green apple, pear, and citrus. This wine was produced in the Veneto and Friuli regions, using the Glera grape in Italy. 

 

Tasting Notes

This wine presents an intense, aromatic nose, offering notes of white fruits such as apple and pear, with a subtle complexity of almond. In the glass, it displays a pale straw colour with a hint of lime green, accompanied by large, frothy bubbles. On the palate, it is off-dry, light-bodied, and balanced by medium acidity, revealing flavours of crisp apple, honeysuckle, peach, melon, and pear.

 

Winemaking

Using the Charmat transfer method, the wine undergoes fermentation in a stainless-steel pressure tank, where it is mixed with sugar and yeast. Fermentation occurs in a closed system, preventing CO2 from escaping into the atmosphere and instead dissolving into the wine. Unlike the méthode champenoise, this method takes place in a pressurised vessel. After the first fermentation, a Pied de Cuve is prepared, followed by a second fermentation lasting 40 days in the tank. Pied de Cuve involves starting fermentation using only the naturally occurring yeasts present on the grape skins, effectively creating a natural or ‘wild’ fermentation process.
